  1. Mix eggs, vanilla and milk together first then add in the flour. I generally use my stick blender, just so there’s no pesky little lumps, but a whisk works fine if you can’t be bothered to get any appliances out of the cupboard, which is often how I feel first thing in the morning 🙂
  2. The consistency at this stage will be quite thick and might look a bit like homemade glue – don’t panic!
  3. Add soda water to get the consistency you want and stir it in. If I’ve managed to get my stick blender out, I don’t use it for this bit – I just use a fork or a whisk. Start slow, because it’s tricky to explain just how much will make your batter the thickness that you want – I generally find that about 3/4 of a cup gets it to where I want to be – not too thick, not too runny. Once it’s all mixed in it should have lots of lovely bubbles on top. You can skip this and just add extra milk if you want, but I find the soda water makes the pancakes so light and fluffy!
  4. I usually let my batter sit for about 20 minutes at this point while I drink my coffee.
  5. When you’re ready to start cooking, get your pan warmed up. Not too hot!! Pour the batter in at your desired pancake size and flip over once the bubbles appear.
  6. That’s pretty much it. Flip again once the other side is cooked – you’ll know when that is, you’re a smart lady 🙂
  7. Then all you have to do is keep them warm while you cook the rest of them, feed them to the masses and accept their praise and gratitude! Well done you!!
